We are learning to love fresh seafood, especially fresh catch fish. We are still getting the hang of catching our own fish, so on days we don’t have our own catch, we hit up the local fresh seafood market and bring home some fish to cook up. We almost always have leftovers; this recipe has become our go-to for using the leftover fish. Add some cooked spinach, marinated artichokes, or even some cooked shrimp for a variation.
This is a simple recipe for making fish dip:
Ingredients:
- 8 oz. cooked fish (such as smoked salmon, tuna, or cooked whitefish)
- 4 oz. cream cheese softened
- 1/4 cup mayonnaise
- 2 tbsp. fresh lemon juice
- 1 tbsp. chopped fresh dill
- 1 tbsp. chopped green onion
- Salt and pepper, to taste
-Paprika for garnish
- Crackers or chips for serving
Optional: marinated artichokes or cooked spinach added to mixture.
Instructions:
1. Flake the cooked fish with a fork, removing skin or bones.
2. Combine the softened cream cheese, mayonnaise, and lemon juice in a mixing bowl. Stir until smooth.
3. Add the chopped dill and green onion to the cream cheese mixture and stir to combine.
4. Add the flaked fish to the bowl and stir gently to combine with the cream cheese mixture.
5. Taste the dip, and add salt and pepper as needed.
6. Chill the dip in the refrigerator for at least 30 minutes to allow the flavors to meld together.
7. Serve the fish dip chilled with crackers or chips.
