Delicious and Easy Gluten and Dairy Waffles
I love waffles and so does the family! When cooking in a small kitchen like on the boat, a regular sized waffle maker is impossible to store. The space is just not conducive to multiple small appliances. I have to choose carefully what kind of cookery I am willing to squeeze into our small space.
Quite by accident, while out shopping at Home Goods, we found the perfect solution, a mini waffle maker! I’ve seen these before at Target and on Amazon, but I hadn’t really considered getting one for the boat. Until now. I wasn’t looking for a waffle maker, I kind of feel like this little Dash brand maker was waiting for me in the clearance section.
Though I was excited about my purchase, I still had a hurdle, what recipe will I use?
We are in the process of modifying how we eat as a family. I will admit that traditional waffle recipes were giving me a bit of anxiety because we are trying to eat gluten free, no eggs, and dairy free when possible. When baking, that is a challenging task. I’ll also admit that I am not a very good baker so figuring out how to replace ingredients and still yield an edible result is daunting.
I decided to make things easy on myself and modified the recipe provided in the little booklet from the manufacturer Dash. Then I crossed my fingers that my family would enjoy my concoction.
I replaced several of the ingredients and ended up doubling the recipe so I would have some to throw in the freezer. It should be noted that the little Dash Waffle Maker was a workhorse as I yielded a baker’s dozen, and it took nearly an hour as it only makes one waffle at a time.
The ingredients for one batch for a mini maker. If you are using a full-sized maker, double the recipe.
List of Waffle Ingredients
1 ¼ cup 1:1 GF Measure for Measure Flour (I used King Arthur Baking Co. brand)
1 tbsp organic brown coconut sugar (Used Big Tree Farms) Unrefined and low glycemic!
2 tsp baking powder
¼ tsp salt
½ cup unsweetened applesauce sub for egg
1 cup Almond Milk (I used Califia Farms Unsweetened)
2 tbsp vegetable oil
1 tsp real vanilla extract
Step 1:
Let’s Get Started on the waffle maker!
Using a paper towel, spread a small amount of coconut oil on the plates of the waffle maker.
Plug in the waffle maker to get it nice and toasty.
Step 2:
For the waffles, mix together the flour, sugar, baking powder and salt. Using a whisk, in a separate bowl mix the wet ingredients together. Add the wet ingredients to the dry and mix until well blended.
Pour ¼ cup of batter into the middle of the bottom then close the lid. Cook until the waffle is medium golden brown and has a bit of a crust to it.
Repeat until all the batter is used. Be careful not to over fill as it will spill over the sides.
